My daughter was diagnosed with the same allergies as your son (in addition to soy and wheat!) at 6 months. She is now almost 5. She eventually grew out of wheat and soy by age 2. Age 1-2 was the hardest because she couldn't gnaw on crackers or breads. I did most of the suggestions everyone has offered. However, after going through the whole hunt for allergy-free brands, I concluded it was much easier to provide her with an organic diet of meats, fresh fruits, vegetables, soy milk, and egg-free grains. I realized that it was impossible to give her any processed/packaged food since they potentialy have allergens. Since age 3 1/2 her egg allergy seems to be less sensitive as she can eat cakes, breads, crackers, etc (before then i would bake things with egg replacer in the organic section). Everyone always assumed that she could barely eat anything, but when I explained to them how she had a diet of fresh food vs. packaged, they were amazed. It may take getting used to in making fresh meals all the time, but I think it has totally benefitted the entire family.
on a side note, here are some great additions to make the fresh allergy free menus tastier:
add applesauce to anything baked to provide more moisture and flavor
Smart Balance butter substitute is a great replacement for butter
sprinkle flax seed in everything you can (easiest on baked goods)...it's great for the skin (eczema)...and btw helps with hot flashes!
