I have turkey leftover phobia! Help a mommy out...

Post me up some ideas for what to do with the 500 gazillion pounds of turkey that seems to be leftover after Thanksgiving. Hide it in the bottom of the laundry basket? Mortar the austin stone in my fireplace with it? Seriously, need recipes.

There are so many things you can do with that turkey.. I say freeze most of it.. like all chopped up and some in slices.. and you'll have main ingredients for like every meal.. such as turkey omlets.. or tukey eggs benidict.. lunch time can be stuffing or cold turkey salad.. or a kind of pie.. just take any recipe you love and replace the main meat with your cooked turkey.. only thing you may need to add extra is 1/4 more salt because most turkeys are dry. Chop it up and put it in chili, make turkey soup, sandwiches. There are so many things you can do. Like Chimica said - just replace whatever meat you use in your favorite recipes!

Turkey Tortilla Soup
Makes: 4 servings
Start to Finish: 20 minutes


Ingredients
* 3 6-inch corn tortillas, cut in strips
* 2 tablespoons cooking oil
* 1 cup purchased red or green salsa
* 2 14-ounces cans reduced sodium chicken broth
* 2 cups cubed cooked turkey (12 ounces)
* 1 large zucchini, coarsely chopped
* Lime wedges (optional)
* Sour cream and cilantro (optional)

Directions
1. In a large skillet cook tortilla strips in hot oil until crisp; remove with slotted spoon and drain on paper toweling.
2. In a large saucepan combine salsa and chicken broth; bring to boiling over medium-high heat. Add turkey and zucchini; heat through. Serve in bowls topped with tortilla strips, lime wedges, and cilantro. Makes 4 servings.

I don't have recipes, persay, but I know you can do like soup, or casseroles, or it could make a yummy breakfast side. I would just search online for leftover turkey recipe ideas...I am sure you will find things there.

Make a turkey pot pie. Oh, they are so delicious.

Get a pie plate (deep dish)
Spray the bottom of the plate
Put Pillsbury dough on the bottom
In a bowl mix Campbells cream of chicken, your turkey, and a can of drained mixed veggies
Put mix in pie plate
Put top pie crust on
brush the top of the pie crust with milk so it doesnt burn
cut 3 slits in the top for ventilation and cook it at 350 for 1 hour. So yummy

Ok, no recipe, but an idea. We carve the entire turkey before the meal (none of my family likes the dark meat, so I just cook a very large breast). I make sure to have plenty of plastic bags in my house, and I send everyone home with a goody bag. We always have enough left for us to keep at home, but not so much that we're all turkey'ed out the following week! Plus, everyone who didn't cook loves to enjoy turkey at their houses for the next few days.

oh yeah, i love recipes without real measurements where "dumping" stuff together is the hardest thing i have to do. AWESOME idea.

I have the easiest recipe! All you need is that leftover turkey, some crusty bread and gravy to make some super yummy open faced Turkey sandwiches. Just stick it under the broiler or in the oven for 10 minutes.

Make a turkey pot roast... Shred all turkey add frozen peas and carrots, and stock (just enough to cover) cook for about 45 min to an hour on medium heat. Then add 1/2 cup of heavy cream and little flour 2 thicken it.

I tear it up, stick it in a pan on low, add a little water & cover it with BBQ sauce.
After it cooks a good while it falls into strings and then we have sandwiches. Best if you crumble potato chips on top of the sandwich. ;)

You can also put it in a crock pot if you have little ones & do not want a pan on the stove.

You can't really over cook it or under cook it just keep it moist but not watery.

I would write how much of what to put in but, I have never paid attention. LOL!

Yep. we throw it in spaghetti, chili, tacos, stir fry.... We also seldom have meat & when we do it is almost never red meat so turkey can cover for anything.

think of it like chicken.
Turkey Salad Sandwiches (like chix salad sandwiches)
soups
casseroles
freeze some and when a recipe calls for chix, substitute.
food processor it and mix it with eggs and breadcrumbs & spices then saute it-turkey patties (like salmon patties)
