I have turkey leftover phobia! Help a mommy out...

Post me up some ideas for what to do with the 500 gazillion pounds of turkey that seems to be leftover after Thanksgiving. Hide it in the bottom of the laundry basket? Mortar the austin stone in my fireplace with it? Seriously, need recipes.

Turkey left overs Mexican style

Saute some onions, create a rue with some butter, and flour along with the onions. Then add in a can of cream of chicken soup, add a can of evaporated milk (not the sweetened condensed stuff made that mistake once) add a can of drained Rotel tomatoes (as spicy as you like it) little salt, little pepper, throw in some left over turkey. You can turn this into a casserole with a layer of Fritos on the bottom, pour the mixture over that, add another layer of Fritos, cheddar cheese and pop it into the oven. Frankly we prefer to eat it like a dip/meal. Of course as the dip/meal you can put in all the cheese you want!

I made this recipe for my hubby about 10 years ago and it was a big hit. Now after every Thanksgiving we make sure and save some Turkey for this recipe the next day.

Take and fry up some cubed potatoes. (About 5 medium or 6). Then set aside when soft and cooked through. (and browned nicely)
fry some chopped onions with butter and throw in about 3 to 4 cups of Turkey.
In a cup mix milk with a packet of Ranch dressing mix in powder form.
Add this liquid to the Turkey fry then mix it through. Take this skillet off the heat then add plenty of shredded Jack Cheese to cover the top. Let cheese melt. Serve it up!
Sorry for not having exact measurements it is not like me. But this one was a complete invention :P

Whoops! made a mistake

Mix the potatos with the turkey after the ranch dressing milk mixture is incorporated!

Look for some really good chicken salad recipes and substitute the turkey for them.

ah, the age old leftover turkey dilemma. Well, other than the obvious which include making and freezing in individual containers- turkey soup, I'd suggest going on a turkey website- no I'm not calling you a turkey nor saying there is a website exclusively for turkeys, LOL. What I mean is if you go on a site for Butterball or any other turkey manufacturers (well, on second thought I don't think Mother Nature has a website per se -kidding) but you know what I mean, people that sell turkeys, you'd probably hit the leftover turkey recipe jackpot! Turkey Shepherds Pie!

This is so easy, I make these up before I even serve our meal.

1. Take a 9X13 casserole dish, throw cut up turkey and stuffing to coat bottom layer of dish.
2. add corn niblets, peas and or sliced carrots what ever you prefer as the next layer
3. pour gravy over first two layers
4. top with mashed potato
5. cover casserole dish and freeze

This is delish in about a month or so when you're craving turkey but don't want all the prep!

Two of our family favorites are Turkey Lasagna and Turkey Pie

Cook lasagna noodles and layer turkey, cheeses to taste (I like colby), Campbels Cream of Mushroom soup, light sprinkle of thyme. Bake in slow oven. Yum Optional add any left over veggies, carrots, peas, onions etc.

or

Make a pie shell out of left over stuffing and bake until crispy (350 oven). Mix left over gravy, diced turkey (this is a good place for dark meat since you really can't tell) left over veggies and top with stuffing for crust or left over mashed potatoes. Bake until bubbly.
