"Roughly one out of every 133 Americans has celiac disease, but 97% remain undiagnosed. This means that almost three million Americans have celiac disease and only about 100,000 know they have it."

What is Celiac Disease?
"Celiac disease is an autoimmune digestive disease that damages the villi of the small intestine and interferes with absorption of nutrients from food. What does this mean?
Celiac disease is triggered by consumption of the protein called gluten, which is found in wheat, barley and rye."

I was not overly impressed with the G Free Diet. For a newly diagnosed Celiac, it could be misleading & confusing. I also thought that Elisabeth was a little wishy-washy about how strictly she follows the diet. In parts she is adamant about checking the GF status of products and foods that you eat & eating other places, but then goes on to say that she had a non-GF meal & has taken other careless chances. It seems as though she is selectively embarassed about having to follow the diet, in my opinion.

Anyone read the G-Free Diet by Elisabeth Hasselbeck? What did you think? Anyone trying out the Babycakes recipes? What do you think about the cookbook containing some spelt recipes, which is not gluten free?

OK... here i go... we have a meeting on saturday to sign contracts on a state approved kitchen...YEAH... Leslie's Sweet Nostalgia is in business.. gluten free cakes cookies and pasta, we will let you know when internet sales start.. hopefully soon!! otherwise i believe we will have the store front on satudays and sundays.. no more black market baking..lol

Should a daycare provide your child a gluten-free diet if you request it (and a doctor prescribes it)? You are paying hundreds of dollars each week or month in tuition right, so shouldn’t these medically-necessary diets be accommodated? The answer is …both yes and no. Have you heard the big General Mills news??? 4 new gluten free kinds of Chex and 3 gluten free Betty Crocker mixes!! Will be clearly labeled gluten free and in stores by June. Read my blog post about it.
