"Roughly one out of every 133 Americans has celiac disease, but 97% remain undiagnosed. This means that almost three million Americans have celiac disease and only about 100,000 know they have it."

What is Celiac Disease?
"Celiac disease is an autoimmune digestive disease that damages the villi of the small intestine and interferes with absorption of nutrients from food. What does this mean?
Celiac disease is triggered by consumption of the protein called gluten, which is found in wheat, barley and rye."

Your group looks GREAT Maryland Celiac. :-) I'm so glad to see new faces. For Leslie...I hope you do start your business. There are many great products, but until all the shelves have gluten free food, there just aren't enough! We'll be cheering for you. So far, my very favorite sugar cookie mix is by "'Cause You're Special." It's GF. Have you tried that one? It's easy to make and even the non-gf folks love it!

At 38 someone said, "do you think you could be allergic to wheat?" nnaaaa, not me, ive been tested, on my arm.. silly me a blood test confirmed... so for 2 years i have thrown 17 years worth of culinary knowledge into developing good wheat free food. i think i am ready to start sharing.. i am making wheat free sugar cookies and a egg noodle. my biggest hurdle is starting a business in this economy, with no capital.. i have faith, and lots of gumption, so i will see where this goes. wish me luck!!

Hi mommas, my daughter and I are wheat intolerant, though we lean towards cooking gluten-free. I post healthy recipes and articles geared towards food allergies weekly.
