I am interested in learning how to make cheese. Any suggestions on where to start? I know soft cheeses are easier for beginners. Let me know what you know.

I know nothing, except that I also want to make cheese and when I grow up, I am going to be a cheesemaker!
I did buy a cheese making kit from Leeners and attempted a batch of mozzarella, but it did not turn out the way I expected. Cheese making is somewhat precise, like baking, and I thought it was a little more free-form, like soup making. With the price of milk these days, I want to make sure I know what I am doing before embarking again.
I SOOOO can relate to wanting to be a cheesemaker. Not sure what drives me, OTHER THAN LOVING EVERY KIND OF CHEESE, to make lovely wonderful cheese. Watched some videos on line that seemed promising . I did watch show on pepper jack cheese and it seems like you will need some SERIOUS equipment to make that happen. The video I watched on making ricotta cheese seemed like a good starter. I am going to do that one, and if successful, work into a mozzarella or some goat cheese. Thanks for the info!!
