Repost from my Jan 4th blog:

Casein Free: 101

Labels: FOOD FOR THOUGHT (aka RESEARCH), GFCF, Stories
Consider this....

Many people who have heard of, or adopted the gluten free diet, have also heard "Casein Free" as well.

Just what is "casein" and why would I want to take that out of my diet? Isn't it enough just to be gluten free? Ah-ha. That depends on what you want for your mind and body. There is much more to learn about the benefits of gluten free AND casein free living.

Casein is the protein found in dairy (not to be confused with lactose, which is the sugar in dairy) and has a similar molecular structure to gluten. So, many people who have a hard time digesting gluten, also have a hard time processing casein.

It's what? Dairy. Casein is in dairy.

Who is eating "casein free?"
People who have a dairy allergy, celiac disease, diagnosis on the autism spectrum, and people cleansing/healing their brain and body.

Some examples of dairy:

Milk
Cream
Butter
Cheese
Whey protein (for all you body builders, bummer, I know)
Yogurt
Milk Solids
And many other "hidden" ingredients

And let us be clear....eggs aren't dairy. I only say that because there is some confusion that eggs are considered dairy because they're generally in the "dairy" section of the grocery store! :-)

Check out the list of "beware the ingredients" from http://web.mit.edu/kevles/www/nomilk.html#badingredients.

Do you know what your body needs (or in this case, doesn't need?!) Interesting research to consider. More to follow.
