I've been getting great offline questions about gluten free and additional information. I'm so happy to help!! Please keep the questions coming.
I have posted my blog link (Mom Cooks Gluten Free), but I also am a co-founder of a non-profit called the Gluten Free Foundation. We incorporated in 2006 and have a mission to help increase gluten free awareness! One of the big vision, long term goals is to be able to go into ANY restaurant or store and have gluten free options available. This will only happen with one LOUD voice. Thankfully, many terrific organizations from the celiac and autism community are paving the way!
We started the foundation after going through the trauma of having a sick child and not knowing what was wrong with him. His celiac diagnosis changed our lives in a very positive way. We learned right away what gluten was and how to keep it out of his diet. I've been cooking gluten free now for five years, and have been gluten free as well for 8 months! He's thriving now and will be 7 in two months!
