Just tried this recipe yesterday with smallish yams.

Sliced them in my trusty french fry cutter (that was too hard, next time
will just slice with my trusty knife :)
put them in a bowl and tossed them with olive oil and salt and pepper and rosemary.

Spread them on a baking sheet and baked them at 425 degrees,
turned them after 10 - 15 minutes, repeated a time or two (sorry, didn't pay close attention
to the time, about 1/2 hr) til tender and crispy.

Anyone else have fairly simple sweet potato or yam recipes to share?

I make them like this all the time! YUM!

I will take baked sweet potatoes and topped with seasoned black beans & goat cheese! YUM! I use this on Fridays during Lent as a nice meatless meal.
