twitter moms: the influential moms network

Ann suggested I start this discussion. I wrote a post on pancake mixes yesterday (http://thedailydelights.com/2009/02/25/discovery-healthier-pancakes...) and their influence on a good day, a healthy breakfast. Here is my ingredient list:

1 1/2 c almond milk
1 c rolled oats
1/2 c spelt flour (if wanting gluten-free, just add another 1/2 c gluten-free oats)
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 c nut butter (we prefer peanut and almond)
1/2 tsp salt
2 tbs butter
1 egg

Now that we make our almond milk from scratch, I have been using the almond pulp in our pancakes instead of the 1/4 c nut butter.

What are your favorite pancake mix ingredients?

Hi Nadia :)

Thanks for the link. Very interesting. I'm trying to decide what to use instead of the white flour & pastry flour...a new challenge. Sounds good!

My favorite is a blender recipe from Sue Gregg:
Blender Batter Waffles/Pancakes:
1 Place in blender; blend at highest speed 3 + minutes (less in VitaMix), while adding enough liquid to maintain a vortex:
1 cup buttermilk or yogurt thinned to same consistency
(1-1/4 cup s for waffles- a thinner batter is best) (or non-dairy alternative + 1 Tbsp vinegar) I use kefir! :)
1 Tbsp melted butter, coconut or extra virgin olive oil
1 tsp vanilla extract
1/2 cup uncooked rolled oats or whole oats
1/2 cup brown rice, buckwheat, corn, or other grain I use cracked or whole wheat
(These are raw whole grains, not flour! We urge you to experiment with millet, barley, spet, and Kamut grain.)

2. Cover blender and let stand at room temperature several hours for improved nutrition
3. Preheat griddle on medium-high (until water drops sizzle on surface), or waffle iron at highest temperature.
4. Just before cooking, add and reblend for 1-3 minutes until smooth:
1 egg
1 Tbsp flax seed (I don't use this. There has been some controversy over flax.)
additional liquid (as needed to keep batter churning)

5. Blend in thoroughly, but briefly, through the vortex, assist with rubber spatual, if needed:
1 tsp baking soda
1/2 tsp salt, to taste

6. Bake on hot griddle or in waffle iron, lightly sprayed with olive oil or brushed with coconut oil.

This serves 3-4. I do double it on occasion but then, I have to stir in the b. soda and salt by hand. I love having a working blender!!!! These are really wonderful and healthy!
