Does anyone have a recipe or green tomatoes that they would like to share? I just harvested the last of my tomatoes and most are green. I wanted to get them before the frost did because once they freeze they are no longer usable.

Just ran into your note via cooking with kids...I know of the typical recipes for fried green tomatoes, various relishes, etc...however if you grow your own tomatoes in future you might try this trick. We pull the whole plant green tomatoes and all - then hang them in the garage upside down from the rafters...the tomatoes ripen naturally with last of the energy from the vine. We often have tomatoes for thanksgiving and one year a few made it until Christmas. If you happen to have a hot house, you can hang them in there. Sorry this is a bit late for this year...but as a gardener - we can always look forward to next year! Laurie Z., Chef-K

Thanks for that tomato ripening idea Laurie! (better late than never... for in the season and for my reply!) do you just have the bare roots jutting up in the air or do you enclose them in something with some dirt?

Hi I just joined Recipes and saw your request. This is a good recipe

Oil
4 green tomatoes, cut into 1/4-inch rings
Kosher salt and freshly ground black pepper
3/4 cup all-purpose flour
1 tablespoon garlic powder
4 eggs
2 tablespoons milk
1 1/2 cups panko bread crumbs
Pinch cayenne pepper
Pinch paprika
Directions

In a deep-fryer, preheat oil to 350 degrees F.

Season tomatoes, on both sides, with salt and pepper. Place flour and garlic powder in a shallow dish. In another shallow dish, beat eggs with the milk. In another dish, mix bread crumbs with cayenne and paprika. Dredge tomatoes through the flour, then the eggs, and then through the bread crumbs. Add only a few pieces to the fryer at a time, so they can cook evenly, about 2 to 3 minutes. Drain on paper towels.
