A simple RAW Peach Pie

Begin by making a simple crust of walnuts and medjool dates pulse chopped in food processor. Use approx. 1/2 lb walnuts to 2/3 lb dates (pitted)
When it has become somewhat crumbled, press into pie plate going up the sides and fluting the edges. Set aside while you make the filling

Start with 8 large sweet peaches.
Peel the skin from 6 peaches and cut into small cubes/pieces, place in bowl.
Take remaining 2 peaches, peel and place in blender.
Add 1/2 banana, 1/2 cup Grade B Maple Syrup and 1/2 cup ground flaxmeal with a dash of cinnamon in blender. Blend to pudding. Fold into bowl of cubed peaches.
Transfer peaches and filling to pieshell.
Place a dusting of cinnamon on top of pie. Place in refrigerator to chill several hours before serving.

Enjoy! It may not sit up real well, but, it does taste lovely. For a simpler way to serve, place some pie crust in bottom of serving bowl, press down, put peach mixture on top, add more pie crust crumble over the top. Yummy.

Sounds delicious! You can post the recipe at http://www.flaxmatters.com/recipe.write.php. You need to register first and then you can write up your recipe there. Our vegan/vegetarians would love it I'm sure!

Hi Deborah, that's really interesting that you use flax as a thickener in your raw pies. I hadn't thought of that before. I'd love it if you shared your recipe with us on our website? We have a lot of vegans/vegetarians and raw food enthusiasts who would be very interestedin that I'm sure.
