This has to be one of the most flavorful sandwiches I have had in awhile...or since the sweet onion Philly Cheesesteak I made a couple of nights ago. But this one has something most sandwiches don't have...truffle oil! Now, I realize that it's ridiculously expensive ($20 for that small bottle in the picture), but it is an elegant treat and definitely worth it. It doesn't take much truffle oil to add a delicious flavor to a sandwich. (See previous post regarding truffle oil for details!)For this sandwich, I just used a lot of left over ingredients from other dishes I had been making. The bread is the Whole Foods Every Day Gluten Free Hamburger Buns (you see those a lot on my blog), pan-fried Pancetta (Italian version of bacon...very flavorful!), white American cheese, Thai basil (but regular basil would be great too), lettuce, tomatoes and white truffle oil.

This recipe has endless possibilities, but I went with my friend Vera's original suggestion for a terrific Sunday morning breakfast! This is simply a baked potato with the middle removed, and filled with scrambled eggs, shredded Cheddar cheese and chives. Directions:
I see my future version of this to include Pancetta, fresh basil and chopped cherry tomatoes. Definitely a fun thing to serve for overnight guests or on a lazy Sunday morning!
I have had the pre-packaged French Meadow gluten free chocolate chip cookies and they're FANTASTIC. So, imagine my surprise to find their cookie dough in the freezer section at Whole Foods! I always think I have time to make things from scratch, and then something pops up for a school event, or we're having guests over, and I need to have something quick on hand.These are delicious. There are 10 cookies to a box and you just put the dough on a cookie sheet and bake for about 14 minutes. Yum.
