Hi and welcome to Nourishng Moms! It most be hard to have your kids in different states. We moved back to WI after 7 years of living in WV. I think both our moms were very happy! And our kids are definitely excited to be living near family again. But at least in this day and age, we can stay in contact through the internet! It really is a blessing!

I made my ginger beer starter 'bug' using the recipe from Wild Fermentation, by Sandor Katz. He got the idea from Sally Fallon's book Nourishing Traditions. I stirred 2 tsp each of organic sugar and grated fresh ginger into a cup of water and let it sit, adding additional 2 tsp of each every day for a week.
It should have started bubbling by then but I think it was too cold. So I gave it more time, another week, actually, and then it started doing its thing :) So I then boiled up ginger/sugar water, let it cool completely, strained it and added water to make a gallon and put in the strained starter.
Bottled it in 20 oz bottles and am letting it sit for 2 weeks.
Not sure what I'm doing, but hoping for the best. My son made the most glorious batch last summer and would love for mine to come out somewhere near as good.
